Various herbs are used as analgesic, anti-inflammatory, anti-bacterial, anti-fungal, expectorant, anti-plaque and odorant. Sentul is an edible fruit also in traditional medicinal which can treat diarrhea, relieve fever, anthelmintic. bark methanol extract inhibit the growth of fungus Candida albican by 39.65%. In addition, ethyl acetate sentul leaves has anti-bacterial activity. The aim this study to determine effect fractionation with different types solvents on phytochemical compounds peel Bali province. This research experimental a laboratory qualitative quantitative analysis models chemical compounds. was carried out from March August 2021. location Faculty Food Technology, Udayana University. Sample criteria old peel, about 30 kilograms. Data collected based results examinations Laboratory University subsequently analyzed qualitatively descriptively. From several compounds, flavonoids, saponins tannins aromatic hydroxyl groups that act antibacterial. Therefore, seen highest levels tannins, aqua fraction ethanol best treatment flavanoid 11476.16 mg/100g QE, 88.605 mg/g 6.862 mg/g.
